La Pastaria's latest restaurant is in the centre, close to the Sofia University and wins you over with its cosy, modern interior and welcoming ambience. It is big enough for a large gathering with friends or relatives, but also cosy enough for a quiet lunch or dinner with a loved one. In the summer, La Pastaria offers outside sitting.
The kitchen of La Pastaria is ruled by chef Valerio Malandrini, a Tuscany-native who has learnt the art of proper Italian food from the best source possible: his family. "I am from Pitigliano, a small town in Tuscany. I learnt cooking while I was still a child, from my grandmother," says he. "She taught me to love our traditions, which I still keep in my cooking." You will taste it now in La Pastaria's menu, with its fascinating dishes freshly prepared after genuine Italian recipes.
The salads, the appetisers, the pastas, risottos and main dishes in La Pastaria are all charged with the spirit of Italy. The restaurant offers genuine Italian salami and cheeses, and you can have your pasta wholemeal or gluten-free. La Pastaria aims to use meat from Bulgarian farms and meat from free-range animals.
What is an Italian restaurant without pizza? But only the best places, like La Pastaria, will offer you the real thing. The tradition of pizza-making in Naples is 1,000 years old, and classical Neapolitan pizza remains the most elegant and complex of all. It is made of 00 flour and sourdough and is let to rise for 24 hours. This, combined with the short baking time results in a pizza with thin centre and air-filled rim. The pizza at La Pastaria is all that: delicious, rich, full with flavour.
The wine selection
The wine list of La Pastaria includes a wide range of labels from all over the world: from Italy to Bulgaria to France to New Zealand. Some of these you might know well, but others will be a pleasant novelty – imported exclusively for La Pastaria, they open new horizons in front of your taste buds, and can be bought only in the chain.
Hospitality and friendliness are not empty words in La Pastaria. All clients are welcomed with complementary warm bruschettas from three types of bread with olive paste, and at the end of their stay are offered a sip of home-made limoncello. The service is genuinely warm and friendly.
